Cake pops

Serves: 1

Ingredients:
Use homemade or bought cake for the cake crumbs. This is a good way to use up stale cake.

100g butter
1 cup icing sugar
1 tablespoon milk
3/4 teaspoon Hansells Orange or Lemon Essence
3 cups cake crumbs
32 pop sticks
375g white chocolate melts
Decorations such as edible glitter, readymade flowers and coloured sprinkles

Method:
Soften the butter and mix in the icing sugar. Cream the butter and icing sugar mixture until light and creamy. Beat in the milk and orange or lemon essence until combined. Mix in the cake crumbs until combined. Refrigerate until firm. Take level tablespoons of mixture and roll into balls. Place on a baking paper lined tray or dish and refrigerate until ready to dip in chocolate.
Melt the chocolate melts to packet directions in a small bowl so the depth of the chocolate is enough to dip and cover the cake pops. Place a pop stick in the cake pop and use as the handle to dip the cake pops into the melted chocolate. Stand in a piece of polystyrene and leave until almost set. Decorate with edible glitter and other edible decorations as wished using some of the leftover chocolate to attach the decorations if necessary.
