Gluten Free Orange Cake by Hansells Recipes

Gluten Free Orange Cake

Serves: 1

Ingredients:
2 large oranges
125ml Alfa One Rice Bran Oil
3/4 cup sugar
2 eggs
1 cup ground almonds (also called almond meal)
1 cup rice flour
1 tablespoon Hansells Baking Powder
Gluten free icing sugar

Method:
Place oranges in a saucepan that fits them tightly. Cover with cold water. Place a saucer on top if the oranges float. Cover and bring to the boil then simmer for about 20 minutes or until the oranges are soft. Drain. When cool enough to handle, cut the oranges into chunks, discarding pips and central pith. Place oranges with skin, oil, sugar and eggs in the bowl of a food processor. Process until oranges are chopped and the mixture well combined. Add the ground almonds and sift in the rice flour and baking powder. Process until combined.
Tip the mixture into a baking paper bottom lined 20 centimetre round cake tin. Bake at 180 degrees C for 45 minutes or until the cake springs back when lightly touched. Cover and leave in the tin for 10 minutes before turning onto a cooling rack. Dust with icing sugar to serve.
