Double Chocolate Banana Muffins by Jocelyn Dibble

Muffins and Scones

Why this recipe is special:
my friend gave me this recipe when i was looking for a nice muffin for my kids without so much butter or oil. my kids love this mix and i make mini muffins and they have one for school everyday.

Serves: 20+

Ingredients:
1 cup mashed ripe bananas, 1/4 cup oil, 3/4 cup milk, 1 lg egg, 1 tsp Vanilla essence,
Dry Ingredients: 1 Cup flour, 1 Cup wholemeal flour, 2 tsp Baking Powder, 2 Tab Cocoa, 1/2 Cup Sugar, 1/2 Cup Chocolate chips, 1/2 tsp salt, 1/4 tsp Baking soda.

Method:
Mash Bananas, add next 4 ingredients, stir well with fork until egg is well combined.
In another bowl mix the remaining ingredients. Fold the banana mix into the dry ingredients, until just combined, stop when mix still looks a little rough. divide into lined muffin tins. bake at 210 degrees or 200 fan bake, bake for 10 - 15 mins. (makes 12 lg or 24 mini muffins)
