Chocolate Mashed Potato Cake by Jayne Walton

Why this recipe is special:
The potato in this makes the cake wonderfully moist. It is gorgeous by itself, but to be extra indulgent, have it as a dessert with a big dollop of cream, or warm with chocolate fudge sauce!
Serves: 10
Ingredients:
1 cup hot, well mashed potatoes, whisked with 1 cup warm water.
2 cups plain flour.
3/4 cup cocoa.
2 tsp Hansells baking powder.
1/2 tsp Hansells baking soda.
1 cup dark chocolate chips.
2/3 cup butter, softened.
2 cups sugar.
1 tsp Hansells vanilla extract.
4 eggs.
Method:
Preheat oven to 180 degrees.
Grease and line a 20cm diameter, round deep cake tin.
Sift together flour, cocoa powder, baking powder and baking soda.
In a separate bowl beat together butter, sugar and vanilla with an electric whisk.
Add eggs two at a time, and beat until smooth.
Add the flour mix and potato mix a bit at a time, whisking after each addition until well blended and creamy.
Stir in the chocolate chips.
The batter may be quite runny, but that's fine.
Pour into the cake tin.
Bake for 45 minutes to 1 hour, until firm.
Cool in the tin.
Dust with icing sugar, or top with chocolate frosting.
