Biscuits and Slices
Why this recipe is special:
Passed down the generations I am third and now my daughter makes it 4th generation. This is my fathers favourite slice - he has nicknamed it "Spring". Very easy to make and so tasty.
Serves: 20+
Ingredients:
2.5 crushed weetbix or 1 heaped cup of cornflakes
1 cup flour, 3/4 cup sugar, 1 cup coconut, 1 teaspoon baking powder, 2 tablespoons cocoa, 6 ounces melted butter, vanilla
Marshmallow: 2 dessert spoons gelatine, 2 cups sugar, vanilla, 1 cup boiling water
Method:
Melt butter and pour over dry ingredients. Mix well. Press into greased sponge roll tin. Bake 15-20 mins at 350F
Marshmallow: Dissolve gelatine in boiling water, add sugar and vanilla (food colouring if desired). Cool. Beat until thick and fluffy and spread over cold biscuit base. Sprinkle with coconut or chocolate icing. When set cut into squares.
