Whoopie Pies by Hansells Recipes

Ingredients:
200g butter
3/4 cup caster sugar
1 teaspoon Hansells Vanilla Essence
1 egg
1 1/2 cups flour
1/2 cup cocoa
1 teaspoon Hansells Baking Powder
1/4 teaspoon Hansells Baking Soda
1/2 cup water
VANILLA FILLING
100g butter
1 cup icing sugar
1 teaspoon Hansells Vanilla Paste
2 tablespoons milk
Method:
Cream the butter and sugar until light and fluffy. Beat in the vanilla essence. Add the egg and beat until combined. Sift the flour cocoa, baking powder and baking soda. Add half to the creamed mixture with half the water and fold in. Repeat with the remaining dry ingredients and water until the mixture is combined. Take heaped measuring tablespoons of mixture and place on a baking paper lined oven tray. With a wet finger, smooth over the top of each mound of mixture, making it into a smooth, round mound. Bake at 190 degrees C for 10 – 12 minutes or until they spring back when lightly touched with the finger.
Join each whoopee together with a generous tablespoon of Vanilla Filling.
VANILLA FILLING
Soften the butter. Add the icing sugar and beat until light and creamy. Beat in the vanilla paste and the milk, a tablespoon at a time. Continue beating until the mixture is light and creamy.
