Why this recipe is special:
This recipe can be made ahead without any last minute fussing and it looks fantastic with the three different "glass " jellies
Serves: 10
Ingredients:
3 set jellies ,red lime and orange,using 1/2 quantity of water -cut into cubes
.1 lemon jelly
1/2 cup water
1 cup pineapple chopped or crushed
300 ml (approx) cream
1/2 tsp Hansells vanilla paste
1 packet Digestive biscuits
125g butter melted
Method:
Heat lemon jelly with 1/2 cup water until crystals dissolve, cool.Add pineapple.
Whip cream,add vanilla paste stir in syrupy jelly then add jelly cubes. Pile onto biscuit base. Set overnight.
Fits into a swiss roll tiin or a large pie plate.
