Lemon Yoghurt Love Cake by Julie Grapengiesser-Seavill

Why this recipe is special:
This is a love cake, bake it and people will love you, it's a giving cake, once tried everyone will want you to give them the recipe, it's a sharing cake (this cake will make 12 + slices, 10 if your servings are huge) this cake will make you happy!

Serves: 10

Ingredients:
This makes a very big cake:
3 cups sugar
4 eggs
Juice & rind 4 lemons
2 cups Alfa One Rice Bran Oil
1& ¾ cups plain unsweetened yogurt
4 cups self raising flour
Pinch salt

Cream Cheese Icing
75g soft butter
250g cream cheese
Juice & finely grated rind of 1 lemon
4 cups icing sugar

Method:
Preheat oven to 160c. Blend sugar eggs lemon juice, zest, oil & yogurt add flour salt,
Transfer to greased 28-30cm tin cook approx 1& ½ hrs cool then ice, serve with natural yoghurt or whipped cream to be very decadent.
