Chocolate fudge by Kelly Bolus

Biscuits and Slices

Why this recipe is special:
This was my Grandma's recipe, who died in her 80's in 2001, and I find everytime I make it (which is often as it is so easy and yummy!) I think of my Grandma.

Serves: 20+

Ingredients:
100g butter
1/2 cup of castor sugar
1 tbsp of cocoa
1/2 tsp of Hansells's vanilla essense
1 egg
1 packet of Super Wine biscuits

ICING :
50g butter
1 &1/3 cups of icing sugar
3 tbsp of cocoa
2 tbsp of boiling water

Method:
Melt butter, stir in castor sugar & cocoa. Beat egg in separate bowl and add with vanilla essence. Crush Super Wine biscuits (either by hand or in food processor) and mix well with other ingredients. Press into a slice tin. Place in fridge to set.

When set, make icing by first melting 50g butter. Then sift icing sugar and cocoa in with the butter. Add boiling water, stirring as you go to get the right consistency. Add a LITTLE bit more water if needed. Spread over slice and place back in fridge to set. (should be a little bit of icing left inthe bowl to eat!) Cuts into 24 pieces.
