Why this recipe is special:
This is a great recipe as it doesn't require any special ingredients and can be whipped up quickly from stuff you have in the fridge/pantry. Its cheaper than a trip to McDonalds, the kids enjoy making them, and makes a great Sunday brunch or treat!
Serves: 4
Ingredients:
Dry ingredients;
1 1/2 cups of flour, I tablespoon of Hansells baking powder, 3 tablespoons sugar, 1/2 teaspoon of salt.
Wet ingredients; 2 eggs, 1 1/2 cups of milk, 3/4 teaspoon of Hansells vanilla essence
Method:
Sift dry ingredients together and set aside. In a bowl beat wet ingredients together until well combined, slowly add dry ingredients until smooth batter is formed. Heat fry pan until butter will sizzle but not burn, drop in large spoonfuls of batter ( I do two at a time) and cook until bubbles form then flip over. You can also add chocolate chips in the pattern of smiley faces if you like. Serve hot with bacon, slices of banana and maple syrup, or be more traditional and have fruit and whipped cream, or lemon and sugar. Whatever you can imagine! Feeds a greedy family of 4 or can serve 5 - 6 people at a pinch!
