Scones

Serves: 1

Ingredients:
2 cups flour
1 tablespoon cornflour
4 teaspoons Hansells Baking Powder
2 tablespoons sugar
50g butter
About 3/4 cup milk

Method:
Sift the flour, cornflour and baking powder into a bowl. Mix in the sugar. Rub the butter into the dry ingredients until the mixture looks like coarse breadcrumbs. Alternatively, melt the butter and mix through the dry ingredients. Make a well in the centre of the dry ingredients. Mix in most of the milk, adding enough extra milk to make a soft dough. Mix quickly and lightly until just combined.
Gather the dough into a ball and gently pat out on a lightly floured surface to 4cm thickness. Use a cutter or straight-sided glass dipped in flour to cut out rounds or a floured knife to cut squares from the dough.
Place on an ungreased oven tray. Bake at 210 degrees C for 10 – 12 minutes or until lightly golden and cooked.
