Kay's Frosted Short Cake by Daile Jones
Biscuits and Slices
Why this recipe is special:
This is so quick to make and is a little different from normal slices. The icing is so yum. An all time favourite in my household!
Serves: 16
Ingredients:
Base:
4 oz butter
4 oz sugar
1 teaspoon Baking Powder
8 oz flour
1 Egg
Frosting:
4 oz butter
1 egg
1 teaspoon vanilla essence
2 oz flour
Method:
Base: Cream butter and sugar. Add egg, then dry ingredients. Press into sandwich tin. Bake at 375 until just lightly brown. Ice when cold with the frosting.
Frosting:
Beat (with electric beater)all ingredients together until thick and creamy. Spread over base and sprinkle with grated chocolate or chocolate hail.
