Soda Bread by Hansells Recipes
Cakes and Tarts
Serves: 1
Ingredients:
1 1/2 cups wholemeal flour
1 1/2 cups flour
3 teaspoons Hansells Baking Powder
2 teaspoons Hansells Baking Soda
1/4 cup Hansells Greek Yoghurt Powder
1 teaspoon salt
2 tablespoons honey
About 3/4 cup cold water
Flour for dusting
Method:
Sift the flours, baking powder, baking soda, yoghurt powder and salt together. Return any husks from the wholemeal flour left in the sifter, to the bowl.
Warm the honey to a liquid. Mix into the water. Make a well in the centre of the dry ingredients and pour in the honey mixture. Mix with a wooden spoon until just combined then use your hands to bring the dough together. Do not over-mix the dough as this will make the bread tough. Turn the dough onto a floured bench and shape into an oval or round about 14cm in diameter. Place the dough on a flour dusted baking tray. Make about 3 shallow slashes across the dough. Sift a fine dusting of flour over the top of the dough.
Bake at 210 degrees C for 25 – 30 minutes or until the bread is lightly golden and sounds hollow when tapped with your knuckles. Cool on a cooling rack.
