Two tone biscuits by keri knight

Biscuits and Slices

Why this recipe is special:
The inspiration has to come from my aunty maria, she made the meanist cookies and cakes at xmas and new years and i've managed to sponge a few recipes and gave them a go. So this one is one, it's short and sweet and fun for the little ones to do.

Ingredients:
125g butter, 1 teaspoon vanilla essence, 3/4 cup of sugar, 1 egg, 2 cups of plain flour 2 table spoon of cocoa. 200g dark chocolate. 25g extra butter .

Method:
Cream butter, vanilla essence and sugar in a bowl and mix until light and fluffy; add egg and mix untill all combined. Place half mix in another bowl; sift half flour in first batch mix untill batch becomes dough then wrap in plastic and put aside, in second batch sift in flour and cocoa and mix to dough. Work dough with fingers, kneading gently then roll chocolate dough between sheets of greaseproof paper to desired thickness, do the same to plain dough. Cut large shapes from doughs and then cut smaller shapes from the centres of the larger shape cuts, then insert the small chocolate cut into large plain cut and vice versa to achieve the 2 tone effect. Place your shapes about 2 finger widths apart on either greased tray or non stick cooking paper. Bake at 175-180 degrees for 10 minutes of untill lightly browned and firm. Place batch on a rack to cool. Melt your chocolate in a sauce pan with 25g till nice ans smooth, spread thin layersover flat side of biscuits. Decorate as desired. Should make up to 20 plus biscuits depending on cutters sizes.
