Christmas Meringues by Hansells Recipes

Ingredients:
Make these meringues any size depending on what you plan to do with them. Small ones are good for giving while larger ones make an easy, excellent dessert, served with strawberries and chocolate and Hansells Vanilla flavoured cream. Yum!!
2 egg whites
½ cup sugar
½ teaspoon Hansells Vanilla Paste or 1 teaspoon Hansells Vanilla Essence
½ cup dried cranberries
2 tablespoons chopped pistachio nuts
¼ cup chopped dark chocolate
Method:
Beat egg whites until stiff. Gradually beat in the sugar. Continue beating until thick and glossy. Beat in the vanilla paste or essence. Fold in the cranberries, pistachio nuts and chocolate.
Take heaped teaspoonsful of mixture and place on a baking paper-lined baking tray. Bake at 110 degrees C for 1 hour or until dry and crisp. Turn the oven off and leave in the oven to cool.
