Spicy Apple cake by Jane Hall

Cakes and Tarts

Why this recipe is special:
Very quick and easy to make.
Has a soft texture, with sweet spiced fruit flavor.
Keeps well in the fridge if a little spirit added to the mix.

Serves: 12

Ingredients:
4-5 small apples
125gms Butter
1 cup sugar, 1 cup sultanas/ apricots or both.
1 egg
1 1/2 cups flour, tsp mixed spice, 1 tsp cinnamon
1 tsp baking soda

Topping
1/2 cup brown sugar
1/2 cup chopped walnuts
tsp cinnamon

Method:
In a Microwave proof bowl or jug cut up into chunks 3 large or 4-5 small apples,
Add Butter and sugar. Melt in microwave on high for approximately 6 mins. Until butter melted, stir, and leave till cool.
Then add sultanas/apricots and egg, stir.
Add after sifting the Flour, Mixed spice, Cinnamon and Baking Soda.
Pour the wet mix into a Quickie Dish or oven dish. Put cut up walnuts mixed with brown sugar and Cinnamon as a topping.
Bake about 1/2hr (30mins) in a Moderate oven, check with knife or skewer if cooked.
Leave to cool in container and sprinkle with icing sugar before serving.
Makes a nice moist cake or a warmed through with ice cream for dessert.
