Oat Biscuits by Hansells Recipes

Oat Biscuits

Serves: 20+

125g softened butter
2 tablespoons brown sugar
1 1/2 cups oat bran
1/2 cup wheatgerm
1/2 cup tapioca flour
1 teaspoon Hansells Baking Powder

Cream the butter and sugar until light and creamy. Mix the oat bran, wheatgerm, tapioca flour and baking powder together to combine. Mix the dry ingredients into the creamed butter to form a stiff dough.
Refrigerate for 5 minutes to firm. Press the dough together to form a firm ball.
Flatten slightly then roll the dough to 0.5cm thickness between two sheets of baking paper.
Use a clean ruler to measure and cut the dough into 6 x 3cm rectangles. Do not separate the rectangles.
Slide the baking paper with the measured biscuits onto an oven tray.
Bake at 190 degrees C for 8 - 10 minutes or until lightly golden.
Repeat with the dough trimmings.
When cooked leave to cool on the tray before separating with a knife.
