Coconut and Lime Friands by Hansells Recipes
Cakes and Tarts
Serves: 1
Ingredients:
125g butter
1 teaspoon grated lime rind
1 cup icing sugar
3/4 cup flour
1 teaspoon Hansells Baking Powder
1/2 cup shredded coconut
3 egg whites
Lime Syrup
2 tablespoons boiling water
2 tablespoons sugar
3 tablespoons lime juice
Method:
Melt the butter. Mix in the lime rind. Sift the icing sugar, flour and baking powder into a bowl. Mix in the coconut. Lightly beat the egg whites with a fork until just beginning to foam. Mix the butter mixture and egg whites into the dry ingredients until combined. Divide the mixture among 6 well- greased friand tins, half-cup moulds or muffin pans. Bake at 180 degrees C for 25 – 30 minutes or until the friands spring back when lightly touched. Cover with a tea towel and leave for 5 minutes before turning onto a cooling rack. Spoon the syrup over the friands and leave to cool.
Lime Syrup
Mix the boiling water and sugar together until dissolved. Mix in the lime juice.
