Why this recipe is special:
Because it is so quick and easy. The microwave saves time by not needing to pre-heat the oven and there is no creaming butter & sugar. Friends rave about it!!!
Serves: 10
Ingredients:
50g melted butter
2 eggs
1 cup brown sugar
half cup milk
1 cup flour
3 Tblsp Cocoa
half tsp baking soda
half tsp cream of tartar
Method:
Melt butter in a medium sized bowl at full power for about one minute. Add eggs and sugar and beat until thick and creamy. Add milk and sifted dry ingredients. Beat again briefly, stopping as soon as ingredients are combined.
Pour into a small ring pan which has been buttered and lined with paper. Cover pan with vented cling wrap. Microwave medium-high (70%) 6-10 minutes until firm near ring. Leave to stand 3-4 minutes before unmolding. Ice with chocolate icing when cold.
