Basic Muffins by Hansells Recipes
Muffins and Scones
Serves: 11
Ingredients:
BASIC MUFFINS
2 cups flour
3 teaspoons Hansells Double Action Baking Powder
1/4 cup sugar
100g butter
2 eggs
1 cup milk
Method:
Sift the flour and baking powder into a bowl. Mix in the sugar. Make a well in the centre of the dry ingredients. Melt the butter. Beat the eggs until combined. Mix in the milk. Pour the egg mixture and butter into the dry ingredients. Mix quickly with a fork or wooden spoon with a hole in the middle, until just combined. Three quarters fill greased muffin tins with the mixture.
Bake at 190 degrees C for 12 – 15 minutes or until the muffins spring back when lightly touched.

VARIATIONS
BLUEBERRY MUFFINS
Add 1 cup fresh or thawed and dried frozen blueberries with the liquid ingredients.

BRAN MUFFINS
Replace 1 cup of flour with 1 1/2 cups natural wheat bran. Reduce the baking powder to 1 teaspoon and sift 1 teaspoon Hansells Baking Soda with the dry ingredients. Replace the sugar with brown sugar. Melt 1 tablespoon golden syrup with the butter.

CHOCOLATE MUFFINS
Reduce the flour to 1 1/2 cups. Sift 1/4 cup cocoa with the dry ingredients. Sprinkle 1/4 cup chocolate chips over the muffin mixture in the tins before cooking.
