No Bake Chocolate Cheescake

Why this recipe is special:
This is so easy to make, but looks and tastes fantastic. Saving power is of great importance, so it's nice to be able to make an amazing dessert without using your oven. Remember to use the freshest, best eggs you can afford, as they aren't cooked.

Serves: 8

Ingredients:
50g butter
80g malt biscuits
20g white choc buttons
250g cream cheese
100g sugar
2 eggs
couple of drops Hansell's Vanillla Extract
150ml cream
100g dark chocolate
2 heaped tsps gelatin
1/4 cup boiling water

Method:
Melt the butter and mix with the biscuits and choc buttons which have been crushed and press into the bottom of a springform tin.
Place in fridge to chill.
Beat the cream cheese until smooth and add egg yolks, sugar and vanilla extract.
Melt dark chocolate and add to cheese mix.
Whisk gelatin into water until it has all dissolved then add to mix.
Whip the egg whites until soft peaks and fold into mix.
Whip cream until hard peaks and fold into mix.
Pour mixture on top of chilled base and put back in fridge.
Dessert is ready when the cake shows no sign of wobble when picked up(about an hour in my fridge)
Decorate top with shaved chocolate, chocolate buttons or fresh berries.
