By adding the icing sugar the mixture is light & fluffy. You get a lovely crispy base. The dough is not dry and the dough mixture and be use as a short bread base

Ingredients:
250g Butter
200g sugar
10ml vanilla essence
1cup self raising flour
2 cups cake flour
1 cup icing sugar
Topping & Filling
4 cups of coconut
1 cup brown sugar
2 eggs
Filling
Any jam
I prefer to use the signature range three citrus
Method:
Preheat oven 180oC
Topping
mix all ingredients well.
Cream butter & sugar until light & fluffy. Add egg & vanilla essence beat well. Lastly sift the flour & icing sugar to form a dough. Sprinkle working surface with flour, use cookie cutter and place rounds in patty pans. Fill with jam and coconut mixture. Bake for 15mins.
