Triple Chocolate Ripple Muffins by Hansells Recipes

Ingredients:
1 cup flour
1/4 cup cocoa
2 teaspoons Hansells Baking Powder
1/2 cup sugar
50g butter
75g dark chocolate
75g white chocolate
2 eggs
1/2 cup milk
To Dust
1 teaspoon icing sugar
1/2 teaspoon cocoa
Method:
Sift the flour, cocoa and baking powder into a bowl. Mix in the sugar. Make a well in the centre of the dry ingredients.
Melt the butter and dark chocolate together. Mix to combine. Melt the white chocolate in a separate bowl until runny.
Beat the eggs and milk together until combined. Pour into the dry ingredients with the melted butter and dark chocolate. Mix quickly until just combined.
Quickly drizzle the melted white chocolate over the mixture. Spoon into greased muffin pans. This will ripple the white chocolate through the dark mixture.
Bake at 190°C for 20 minutes or until the muffins spring back when lightly touched.
Cool on a rack. Mix the icing sugar and cocoa together and dust over the muffins using a small sieve.

TIP
Melt the chocolate in the microwave on high for 45 seconds then add increments of 12 seconds until the chocolate is melted.
