Cronuts by Hansells Recipes

Ingredients:
3 tablespoons sugar
1/2 teaspoon salt
2 cups high grade flour
2 1/2 teaspoons Hansells Baking Powder
150g cold, hard butter
1/2 cup plus 2 tablespoons milk
Alfa One Rice Bran Oil
Caster sugar
Method:
Place the sugar, salt, flour and baking powder in a food processor or in a bowl and mix to combine. Cut the butter into chunks and add to the dry ingredients. Process or rub the butter into the dry ingredients until the mixture resembles coarse crumbs. Add the milk and mix to form a stiff dough.
Turn the dough onto a lightly floured board and form into a cylinder. Roll the dough to a 1cm thick rectangle that is twice as long as it is wide. Fold into thirds from the short side so the last third overlaps the other two.
Turn the dough 90 degrees and repeat the rolling and folding process twice more.
Roll the dough to 1.5cm thickness. Cut into cronuts using a doughnut cutter or use a 7.5cm diameter cutter and a 3cm diameter icing piper to cut the centre from the cronut to give a ring.
Reroll the offcuts.
Heat about 8cm of oil to 190 degrees C and cook one or two cronuts at a time for about two minutes or until puffed and golden, turning if necessary to ensure even cooking.
Drain on paper towels and toss in caster sugar.
