Why this recipe is special:
I discovered this receipe about 20 years ago, with some minor alterations, it has been a family favourite ever since. It is easy and quick to make with basic ingredients usually found in the cupboard at short notice. So delicious it may serve only 2!
Serves: 4
Ingredients:
Dumplings: 1 Cup self raising flour, Pinch salt, 60g cold butter, 1 tspn sugar, 1/2 cup raisins, rind of one lemon, 1 egg, about 3 tablespoons milk to mix.
Syrup: 11/2 cups water, 3/4 cup brown sugar, 2 tablespoons golden or maple syrup or both, 30g butter. Juice of one lemon(add at the end of cooking).
Method:
Dumplings: Rub cold butter into sifted flour, add sugar, lemon rind and raisins. Make a well in the middle and add egg and enough milk to make a stiff dough. Make about 8 teaspoon sized dumplings, put them onto a plate, cover and cool in the fridge. (Can be made the night before)
Sauce: Put sauce ingredients, (except the lemon juice) into a large shallow saucepan, bring to a gentle boil. Carefuly put the cold dumplings into the boiling sauce. Cook uncovered for approx 10 min. Cover and cook for a further 7 to 10 min. Dont overcook. Add lemon juice before serving. Serve with cream or vanilla ice cream.
