Why this recipe is special:
This recipe is special as it takes the normal boring banana cake and adds a zing! Its like being on a tropical island especially if iced with coconut frosting. It tastes just as good with a coffee as it does if served with whipped cream or ice cream!
Serves: 16
Ingredients:
1/4 cup oil
2 eggs
1/2 cup sugar
2 mashed bananas
2-3 passionfruit (crush seeds) or 4 Tbls passionfruit fruit flavouring/topping
1/2 cup white chocolate pieces
2 cups flour
1 tsp baking soda - dissolved in 2 tbls milk
pinch of salt
Method:
Beat oil, eggs and sugar together. Add mashed banana, passionfruit and white choc pieces.
Then add the flour and baking soda dissolved in milk and pinch of salt, beat well, pour into prepared cake tin and bake at 180c 20-30 mins. Ice with coconut/vanilla frosting when cold.
