Why this recipe is special:
I'd love to make up a story about my great-great-grandma passing this recipe down through the generations, but it would be a lie.
This recipe is special because EVERYONE who tastes it says its the best darn Choccy Cake they've ever eaten!!!
Serves: 8
Ingredients:
150 Grams Butter
2 Cups Sugar
1/2 Cup of sifted Cocoa
1 level tsp Baking Soda
1 1/2 Cups Hot Water
2 Cups Flour
2 Teaspoons Baking Powder
3 Eggs
1 Teaspoon Vanilla Essence
1/2 Teaspoon Salt (optional)
Method:
Put the butter, Sugar, Cocoa, Baking Soda and Water in a pot and bring to the boil slowly. Allow to simmer for five minutes, stirring occasionally. Remove from heat, and allow to cool for at least 10 minutes, stirring often.
Add the Vanilla and salt.
Beat the eggs in a separate bowl and add to the chocolate mixture.
Sift the flour and baking powder and add the chocolate mixture. Beat until smooth.
Bake at 160 degrees for approx 30 mins (fan bake oven) or until cooked.
Ice with your favourite icing, or serve with berries and dusted with icing sugar.
