Ingredients:
1 packet of Boysenberry Jelly
2 cans of drained Boysenberries (juice set aside for jelly)
2 packets of Hansells Chocolate Mousse (made up as per packet and chilled)
1 x double sponge Chocolate Favour (from foodtown or Pac N Save)
1 litre of Swiss Maid Custard
300ml or 600ml if you like lots of cream
1 Chocolate Flake crushed
Sliced strawberries
Method:
Make jelly as per packet I use the juice from the berries and just omit the water and replace with juice which is normally about a cup. This makes the jelly really tasty. Put the jelly into the fridge and leave to set for 3 to 4 hours. Make up the chocolate mousse as per packet and chill. Slice the Chocolate Sponge horizonally so that you have 3 sliced for each sponge. Once the jelly has set it's time to layer the Trifle together. I start with a slice of sponge that i place over the jelly then i get some of the boysenberries and spread the berries over the sponge, next spoon over about 1/2 a cup of the chocolate mousse spread evenly over the sponge. Next using about 3/4's of a cup of custard spread over the chocolate mousse. Then the next step is to start again with the sponge layering the same again sponge, berries, chocolate mousse and the custard until all ingredients have been used. Whip the cream and Lastly finish with the whipped cream spread over the trifle mixture garnish with sliced strawberries and crushed chocolate flake. Chill for a fe hours and serve and ENJOY...this trifle tastes even better the day it just keeps getting better.
