Biscuits and Slices
Why this recipe is special:
This slice is so easy to make, but absolutely delicious.Can be served warm with a dollop of cream as a dessert, or with a cup of tea for a treat in the afternoon. The combination of buttery base and soft zingy centre make this a winner every time!
Serves: 12
Ingredients:
For the base:
150g butter
1 1/2 C flour
1/2 C icing sugar
For the topping:
Grated rind of one large or two small lemons
3 eggs
1 C caster sugar
1/4 C lemon juice
1/4 C Slf raising flour
Method:
Preheat oven 170 deg.
In a food processor, whizz the base ingredients until they form a soft dough. Press into a greased and lined slice tin. Bake until golden (15-20 mins)
Without washing, add all the topping ingredients to the food processor bowl. Whizz these until well mixed. Pour onto the base while it's still hot. Bake until golden (20-25 mins).
Slice when cool and dust with icing sugar. Delicious!
