Why this recipe is special:
Very moreish cake! Is also a wonderful dessert warm with cream or custard. For a slightly different flavour mix the brown sugar with some cinnamon before sprinkling it on the top.
Serves: 8
Ingredients:
225g butter.
225g sugar.
4 eggs.
250g self raising flour.
25g cornflour.
1 tsp Hansells vanilla extract.
225g peeled weight diced apple.
brown sugar.
Method:
Preheat oven to 180 degrees.
Grease and line a deep, 18cm diameter round cake tin.
Cream butter and sugar with the vanilla essence.
Beat in eggs, flour and cornflour a little at a time until smooth and creamy.
Fold in diced apple.
Spoon into prepared tin.
Sprinlke the top generously with brown sugar.
Bake for 1 hour to 1 hour 15 minutes, until a skewer comes out clean and the top is golden and crisp.
