Chocolate Biscuit Fudge by Jane McGuire

Why this recipe is special:
This was the one recipe that mum aways used and has been the standard birthday party request since I was about 5 years old for my sisters and I, and I get the same request from my kids!
Serves: 12
Ingredients:
125 grams butter
125 grams sugar
1 beaten egg
1 slightly heaped tablespoon of cocoa
100 grams or so of chocolate for melting
1 tsp of hansells vanilla essence
1 packet of broken vanilla wine biscuits
Method:
Place butter, sugar, cocoa and beaten egg in saucepan, cook until melted, add Hansells Vanilla essence and crushed biscuits, mix well, return to heat for a couple of minutes. Place in a flat greased tray, smooth out. Break up the melting chocolate into a microwave proof bowl and put in the micorwave for 30 seconds, remove, stir and return to microwave, repeat until choclate is melted and smooth. Pour over the fudge and when set cut into fingers. ENJOY!!
